Vacuum sealing raw sausage squeezes it into a unpleasant mess, unless you apply these few simple tricks. Sausage is one of the most common products to cause false vacuum leaks, be sure to follow along to avoid these.

How to Vacuum Seal Sausage - Freeze Tempered

Flash freeze your sausage for 2-4 hours. Just enough to keep it from squishing and deforming in the vacuum chamber sealer.

Especially when raw, vacuum sealers can turn the meat’s shape into something more pancake than sausage-like.

How to Vacuum Seal Sausage - Pre-Seal

Now frozen into the desired shape, place the sausage into an appropriately sized, 3 or 4 mil vacuum seal bag/pouch.

Fold the mouth of the pouch outward and place your sausage inside perpendicularly.

“Hills and valleys” inside a vacuum seal pouch can increase the chances of a seal failure and leak.

Typically, one row of links will store more easily. And since the goal here is storage, a stackable food is best. Food preservation is a simple combo of the right techniques with the right tools.

How to Vacuum Seal Sausage - In Chamber

Make use of any filler plates you have for the chamber vacuum sealer. Expedite vacuum sealing meat by filling the space around it.

Sleek, time-saving filler plates are available for all models of JVR chamber vacuum sealer machines.

Set your cycle times. Program the unit to pull full vacuum. For the Vac100 the settings are:

Vacuum: 50 seconds

Seal bar: 1.8 seconds (for a 3 mil chamber pouch) or 2.0 seconds (for a 4 mil chamber pouch)

Cooling: 3.0 seconds

Close the lid and run the cycle for fully vacuumed, safely packaged sausage.
