Bo’s Salmon Bites
Instructions
1Combine & Cut
• Whisk your marinade combining all the ingredients.
• To remove the skin from Salmon, pour hot water on the skin side of the filet, the skin will remove easily.
• Cut the filet into “cubes”.
2Bag it
• Place salmon + marinade into a vacuum bag
• Keep everything in a single layer for even infusion.
3Vacuum Seal
• Place pouch inside the JVR Vac100 chamber
• Run a full vacuum cycle (50 seconds)
Ultimate Cheat Code:
• Use the Vac100 chamber accessory (3 gallon)
• Pull a vacuum one time
•Allow the salmon to sit in the refrigerator for 2 hours under vacuum. (Due to the Vac100’s ability to draw out 99% of the air as the pressure equalizes the marinade is “forced” into the Salmon. This drastically reduces the marinade time.)
4Cook (Air Fryer and Oven Friendly)
• In a preheated air fryer cook at 375 for 10 min
• In a preheated oven cook at 400 for 10 min
